Spaghetti Bolognese

Ingredients
- 400 g spaghetti (or your favorite pasta)
- 2 tbsp olive oil
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 2 carrots, diced
- 2 celery sticks, diced
- 500 g ground beef (or 250 g beef + 250 g pork)
- 200 ml red wine (optional)
- 400 g can of crushed tomatoes
- 2 tbsp tomato paste
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt & pepper, to taste
- Fresh basil leaves or parsley, for garnish
- Grated Parmesan cheese, to serve
Instructions
- Bring a large pot of salted water to a boil. Cook spaghetti until al dente (about 8–9 min). Drain and set aside.
- Heat olive oil in a large pan over medium heat. Add onion and cook until translucent, about 3 min.
- Add garlic, carrots, and celery; sauté for 5 min until vegetables soften.
- Increase heat to high, add ground meat. Break apart with a spoon and cook until browned (about 7 min).
- Deglaze the pan with red wine, scraping up any brown bits. Let the wine reduce by half, ~3 min.
- Stir in crushed tomatoes, tomato paste, oregano, basil, salt, and pepper. Reduce heat to low, cover, and simmer for 25 min, stirring occasionally.
- Taste and adjust seasoning if needed.
- Serve sauce over spaghetti, garnish with fresh herbs and grated Parmesan.
