Spaghetti Bolognese

  1. Bring a large pot of salted water to a boil. Cook spaghetti until al dente (about 8–9 min). Drain and set aside.
  2. Heat olive oil in a large pan over medium heat. Add onion and cook until translucent, about 3 min.
  3. Add garlic, carrots, and celery; sauté for 5 min until vegetables soften.
  4. Increase heat to high, add ground meat. Break apart with a spoon and cook until browned (about 7 min).
  5. Deglaze the pan with red wine, scraping up any brown bits. Let the wine reduce by half, ~3 min.
  6. Stir in crushed tomatoes, tomato paste, oregano, basil, salt, and pepper. Reduce heat to low, cover, and simmer for 25 min, stirring occasionally.
  7. Taste and adjust seasoning if needed.
  8. Serve sauce over spaghetti, garnish with fresh herbs and grated Parmesan.
  9. Enjoy with a glass of wine or your favourite drink!
